The glycemic index is a number from 0 to 100 assigned to a food Glycemic Load: concentrated amount of carb in the food (deducting the fiber) The Glycemic load (GL) is worked out by the following formula: GL = GI x carbohydrate / 100 Low Glycemic load (low GL): 0 to 10 Medium Glycemic load (med GL): 11 to 19 High Glycemic load (high GL): 20 and over HOWEVER: it does NOT take into account the impact of having any FAT in the bloodstream from eating a high fat diet or recently eating foods higher in fat (even \"healthy\" fats i.e. nuts/seeds/avocados) When there is too much fat clogged up in the bloodstream, the carbs (fructose/glucose) that you\'ve eaten will not be able to quickly & efficiently be able to flow into the bloodstream as they should. The fats will slow down this process and therefore rise your blood sugar and spike your insulin. THEREFORE it\'s more important to keep an eye on the amount of fats you consume daily.
